Where do I source interior trim for my Stage 1 Safari... I need door trim and a dashboard top..

It depends where you are.
Dash tops still pop up all around the world. Real door cards are NLA. Reproductions aren't very good and are expensive for what you get.

It is not that hard to reupholster your dash top. All you need is upholstery foam and heavy duty black vinyl fabric, and glue.
Door cards may be bought but as said, the quality is variable and it may be easier to make your own.

Novel but not sure that the '37 pattern straps or pocket position is practical with the door closed or for anyone inside the car.
The factory door card for station wagon is actually a good design. Pocket opening could be a little larger but it's usable from inside and seated.
Otherwise buy the army door pocket for 110, rivet them in place and you have room for anything. Far more than what the cloth map pocket will ever hold.

The only thing my door pockets ever held was water. Never left any maps in 'em
